Michael's on East snaps up a Longboat memory

Michael's on East features a Longboat Key Snapper for its Savor Sarasota menu.

Savor Sarasota Restaurant Week may have ended June 14, but Michael's on East's menu is continuing through June and pays homage to the Key.

On the menu is the Longboat Key Snapper, which is a snapper accompanied with lump crabmeat, basil and sundried tomato beurre blanc, sweet potato planks and sautéed haricot verts.

Owner Michael Klauber created the Longboat Snapper in 1982, while working as the food and beverage director at the Colony Beach & Tennis Resort.

"There was some local fish on the menu, but it was very straightforward," Klauber said. "It was grilled or sautéed, and that was it. People kept asking for a fancier dish."

Klauber came up with the idea of the Longboat Snapper because of his love for sundried tomatoes and its perfect complement with crabmeat.

"We were exploring new dishes for the menu," Klauber said. "It was quite a challenge with the chef at the time, who had his own opinion, and I convinced him to try this new dish and to try it as a special."

Klauber resurrected the snapper dish for Savor Sarasota, and diners have enjoyed it.

"About 80% of sales have been that dish," Klauber said. "It’s incredible."

Because of its popularity, Klauber plans to put the Longboat Key Snapper on the restaurant's regular menu.
