Inspiration: “We were riding through Sarasota one day and saw a couple of homeless guys sitting on the curb, and I rolled the window down and said do you mind if I take a couple of photos of you? This guy was majestic. And, at first he said, “No.” So I said okay and then he said, “No, I’m only kidding you can take some photos.” So, I took several photos … I teach watercolors and have been teaching for 100 years. I’m teaching private classes to Harbor Landings on Tuesdays. I’m here in the winters and in New York in the summer.”

Where: Darwin’s on 4th, 1525 Fourth St.
What: Chef Darwin Santa Maria’s take on pork belly features the traditionally Korean dish of kimchee or fermented vegetables. This starter is featured on the new menu at Darwin’s on 4th.
What else: The spicy kimchee, smoky pork belly and sweet plantain heighten the flavor pallet in an unusual way.
Best paired with: Darwin Brewing Company Chapo (Maduro) Weisenbock, a chestnut brown German weizenbock brewed with roasted sweet plantains to produce a well-balanced flavor.
