Wolfie's Hand Cut headed to University Town Center

The new restaurant will offer 21st-century versions of the Original Wolfie's and Rascal House menu items.

Wolfie's Hand Cut, a new concept from The Original Wolfie's and Rascal House restaurants, is expected to open in late November or early December in The Shoppes at UTC, 8519 Cooper Creek Blvd.

It is taking over the space that previously hosted Sprinkles Cupcakes.

A press release said Wolfie's Hand Cut "is designed for today's diners while honoring the tradition that has made Wolfie's a local favorite. Wolfie's Hand Cut will feature 21st century versions of the classic menu items guests know and love, along with fresh, new offerings."

"This is more than a new restaurant — it's the next evolution of the Wolfie's brand," said Jason Starkman, the director of operations, in the release. "We've been working behind the scenes to create something special, and we're excited to share it with our loyal guests and a new generation of customers."

Starkman explained that the old-school deli concept doesn't work anymore.

He said making sandwiches affordable is harder to do these days with the high-quality meats his restaurants are known for serving. So he is trying a concept where he cuts back on the number of employees needed while utilizing a format similar to what a Chipotle Mexican Grill has made familiar.

He said if he has to cut back on the quality, then he isn't going to do it any more.

"Today's delis cover everything up with seasonings and sauces," Starkman said. "I don't believe anyone matches our quality."

The Original Wolfie's and Rascal House restaurant closed this month in the Sarasota Arts District.

"We are incredibly grateful to everyone who supported our Sarasota restaurant over the years," Starkman said. "The friendships we've built and the memories we've shared with our guests will always be an important part of our story."

The Original Wolfie's and Rascal House also operates a production facility and commissary in Lakewood Ranch at 5318 Paylor Lane.
