Chefs collaborate for 'Pies and Pints' pizza and beer series

When life gives you lemons — make lemonade. Or ... pizza.

When Danni Bleil and Tom Baril, owners of Polpo Pizza Co., found themselves in a pinch for staff, they asked a chef friend if he'd like to lend his talents to their popular Neapolitan pizza truck.

Previous obligations kept the collaboration from coming to fruition, but it did plant the seeds for a new idea: What if they invited local chefs to step into their mobile kitchen to create unique collaborative spins on traditional Neapolitan pizza?

Starting Monday, March 30, the idea will take shape in the form of "Pies and Pints," an ongoing food and beer series held at Shamrock Pub.

Spanning four Mondays, the series will feature four local chefs, who will each team up with Polpo to provide a unique night of pizza, beer and a celebration of the food community.

Much like the popular Summer Chef Jam series, guests will pay $20 for three courses of pizza (1/4 pizza per serving) and bottomless pints, hand selected by Polpo and Shamrock to complement the meal.

For the first annual event, the night's featured guest chef will create a signature pizza, which will be served as the first course, Polpo will create a complementary second course and the two will collaborate on the final course.

"Each of these chefs is very creative in their own restaurant," says Bleil. "But there can be a lot of pressure to perform. This seemed like a fun way for them to be creative and let loose. I want to see what these chefs pull off and how their vision translates to pizza."

The evenings will run like a tasting in a restaurant, with courses served every 40 minutes, and Bleil and Baril encourage guests to arrive on time.

Baril says he's excited to collaborate with the chefs and continue to build buzz around the event.

"This town is hungry for new things to do, eat and drink," he says. "The food scene here is improving all the time, and we're excited to introduce this style of pizza and this mindset to Sarasota. It's a fine-dining approach to pizza."
