Kay Kouvatsos of the Village Café on Siesta Key enjoys serving up a wide variety of food while working at her family restaurant. One of Kouvatsoses favorite recipes was handed down to her from her mother-in-law who got the recipe “eons” ago. Kouvatsos serves up the rice pudding to her family as well as her customers.

Rice Pudding
Ingredients:
• 3 cups of water
• 1 cup of rice
• 2 cups of milk
• 1 cup of sugar
• 2 eggs
• 1 tsp of vanilla
• 1 qt of milk (added later)

Directions
•Put three cups of water and one cup of rice into a pot and boil until the water evaporates.

•Mix 2 cups of milk, 1 cup of sugar, 2 eggs and a teaspoon of vanilla together in a bowl. Take mix over to the pot on the stove and add the mixture into the pot. Add 1 quart of milk to the rice and bring to a boil while remembering to stir frequently for 15 minutes.

•Remove from heat and cover the bowl. Let it stand for 10 to 15 minutes. Stir and divide into portions. Sprinkle with cinnamon and refrigerate. The rice pudding will thicken as it cools.
