A great eggs Benedict means the hollandaise sauce MUST be homemade. (Listen up anyone still using that lame Knorr Swiss powder---you are going to get exposed soon enough.) After all, this creamy cholesterol-laden sauce is quite simple to make.

A great eggs Benedict also includes runny poached eggs. Not so runny that the whites aren’t cooked, but loose enough so as you break into the sauce-topped egg, the yolk runs into, well more yolk of the hollandaise---and that, my friends, is something really, really good. The Breakfast House gets an A for their toasted English muffin with grilled ham. You can also try the house special with crabmeat and that luscious, silky hollandaise sauce.
