Molly’s Truffle Mac and Cheese
Serves 1-2 people
“Throw out that box of yellow powder and make a delicious mac and cheese from scratch. Once you’ve tried this version of the classic comfort food, you’ll never go back.” — Executive Chef Al Massa

Ingredients:
4 ounces pasta (elbow, penne, ziti)
2 cups heavy cream
1 teaspoon chopped garlic
1 teaspoon chopped parsley
3 tablespoons truffle oil
1 cup grated cheese; equal parts Gruyere, Swiss and parmesan
1 tablespoon butter
Salt and pepper to taste
Pot of boiling water with strainer

Method:
1. Cook pasta al dente and shock.
2. Heat cream in saucepan. Add garlic, parsley, Truffle oil. Salt and pepper to taste. Heat until cream simmers.
3. Drop pasta in boiling water and remove after 10 seconds. Add to cream mixture. Add cheese and continue to cook until cheese melts and sauce thickens.
4. Adjust seasoning. Pour into serving dish.
